Perfect Pan-Seared Sirloin Steak Recipe

The Ultimate Guide to Cooking a Nebraska Raised Sirloin Steak

There's nothing quite like a perfectly cooked sirloin steak—crispy, caramelized crust on the outside, tender and juicy on the inside. Our premium Nebraska beef sirloin is dry-aged for exceptional flavor, and with this simple technique, you'll get restaurant-quality results every time.

What You'll Need

  • 1 Oak Ridge Road Beef sirloin steak, at room temperature
  • 1 tablespoon high-heat oil (avocado or grapeseed)
  • Kosher salt and freshly ground black pepper
  • 2 tablespoons butter
  • 2 cloves garlic, smashed
  • Fresh thyme or rosemary (optional)

Step-by-Step Instructions

1. Bring steak to room temperature
Remove your sirloin from the refrigerator 30-45 minutes before cooking. This ensures even cooking throughout.

2. Season generously
Pat the steak completely dry with paper towels—moisture is the enemy of a good sear. Season both sides liberally with kosher salt and freshly ground black pepper.

3. Get your pan smoking hot
Heat a cast-iron or heavy stainless steel skillet over high heat until it's smoking. Add the oil and swirl to coat.

4. Sear the steak
Lay the steak in the pan away from you to avoid splatter. Don't move it! Let it sear undisturbed for 3-4 minutes until a deep brown crust forms. Flip and sear the other side for another 3-4 minutes.

5. Add butter and aromatics
Reduce heat to medium. Add butter, garlic, and herbs to the pan. Tilt the pan and use a spoon to baste the steak with the melted butter for 1-2 minutes.

6. Check for doneness
Use an instant-read thermometer for perfect results:

  • Rare: 120-125°F
  • Medium-rare: 130-135°F (recommended)
  • Medium: 135-145°F
  • Medium-well: 145-155°F

7. Rest before slicing
Transfer the steak to a cutting board and let it rest for 5-10 minutes. This allows the juices to redistribute throughout the meat.
