Cooking Tips:

  • Smoking: Low and slow is the key - smoke at 225-250°F for 12-16 hours until internal temp reaches 203°F. Wrap in butcher paper at 165°F to power through the stall.
  • Oven Roasting: Season generously, sear all sides, then braise covered at 275°F for 6-8 hours with beef broth. Falls apart tender every time.
  • Resting: Let rest for at least 1 hour after cooking. This redistributes juices and makes slicing easier.
  • Slicing: Always slice against the grain for maximum tenderness. The flat and point have different grain directions - rotate your cutting board between the two.
